Pour faire pastez d'artisseaux.

Prennez des artisseaux qui soient cuits, puis prennez le bas de l'artisseau couppé par tranches, & le mettez dans le pasté a demy plain, puis mettez dessus poiure, muscade, & mente haschee & beurre fresche: estant vn quart d'heure en four iettez de vin blanc dedans, & le laissez cuire encor vn quart d'heure.

To make pasties of artichokes.
Take some artichokes that are cooked, then take the bottom of the artichoke cut into slices, & put it in a pasty to half full, then put on top pepper, nutmeg, chopped mint, & fresh butter: being a quarter of thehour in the oven cast in some white wine, & let it cook another quarter of an hour.
